The easiest buttermilk pancakes
These are the softest, fluffliest pancakes, perfect for an easy Sunday morning breakfast!

Makes about 16 pancakes
Ingredients-
2 3/4 C Self-Raising flour
4 tbsp caster sugar
2 tbsp butter melted + extra for greasing the pan
600ml buttermilk (a whole carton)
1 tsp vanilla
1 tsp maple syrup
2 eggs
Optional- chocolate chips or blueberries
Method-
1. Sift flour into a large mixing bowl and add in the sugar, melted butter, buttermilk, vanilla, maple syrup and eggs. Stir everything together until combined being careful not to mix for too long otherwise the flour will create a dense pancake.
2. Heat a pan over low-medium heat and add in a bit of extra butter just to coat the base of the pan. Spoon dollops of the batter into the pan and drop a couple of chocolate chips onto each pancake. Wait a couple minutes until the bubbles that form on the top pop then they are ready to be flipped.
3. Cook for a further 1-2 minutes on the other side then serve with fresh fruit and maple syrup.
