Makes- 16 Prep- 10 minutes
2 cups sifted icing sugar
1/4 tsp cream of tartar
395g condensed milk
1/2 tsp vanilla extract
3 1/2 cups desiccated coconut
3 drops pink food colouring
1. Grease and line a 20cm square pan with baking paper. Combine sifted icing sugar and cream of tartar in a large bowl. Add condensed milk and vanilla to the mix and stir vigorously with a spoon until smooth.
2. Fold in coconut until well combined then divide mixture in half and place into two separate bowls.
3. Add 3 drops of pink colouring to one of the bowls and thoroughly stir to evenly incorporate the colour. Press the pink mixture into the bottom of the pan using the back of a metal spoon to smooth out the surface.
4. Top with remaining white mixture, smooth out the surface then place pan into the fridge for 2 hours to set. Cut into 16 pieces and serve.
