Chocolate Mousse

Prep- 20 minutes Makes- 6 generous serves

This rich and luxurious mousse is an all time favourite in my family and goes really well with some fresh berries and shaved chocolate. It's the ultimate chocolate dessert and is the perfect way to end a delicious evening meal with friends or to have as a cheeky weeknight pick-me-up.


60g butter

200g dark chocolate

3 tbsp caster sugar

300ml thickened cream

2 eggs

*Optional but highly recommended- 1/2 tbsp contreau


1. Melt chocolate and butter in a heatproof bowl over simmering water and stir until smooth.

2. Add sugar and cream to a bowl and use an electric mixer to whip until soft peaks. Separate the eggs adding the yolks to the cream, stirring to combine and add the whites to a clean bowl.

3. Whisk the whites until stiff. Add the melted chocolate and butter to the whipped cream with the contreau and stir through thoroughly. Gently fold through the whites with a spatula then spoon mousse into glasses or a serving bowl and leave to set in the fridge for 2 hours.

4. To serve, top the mousse with fresh berries, chocolate shavings and mint.
