Anzac Biscuits

Makes- about 20 Prep- 10 minutes Cook- 20 minutes

Ingredients-
1 cup rolled oats
1 cup plain flour
3/4 cup sugar
1/4 cup brown sugar
3/4 cup desiccated coconut
125g butter
3 tbsp golden syrup
1 teaspoon bicarbonate of soda
2 teaspoons boiling water
Method-
1. Preheat oven to 150C and line 2 baking trays with baking paper.
2. Combine oats, flour, sugars and coconut in a large bowl.
3. Combine butter and golden syrup in a saucepan over low heat and stir until butter is melted. Combine bicarb soda and water in a small bowl, stirring together before adding into the butter mixture. Pour butter mixture into the dry ingredients and mix until everything is incorporated.
4. Roll 1 1/2 tablespoons of mixture together and flatten slightly on tray leaving about a 4cm gap between biscuits. Bake for 15-20 minutes or until biscuits are golden brown. Allow to cool on trays.
